Americans seek out eco-conscious companies and new foods from around the world when exploring the grocery aisles. In fact, according to a recent survey conducted by Information Resources, Inc. (IRI), nearly 50 percent of U.S. consumers consider at least one sustainability factor when grocery shopping and approximately 40 percent search specifically for organic products.

Fortunately, it doesn't take a passport or an outing to an expensive restaurant to bring organic and ecofriendly foods to the table. The experts at Seeds of Change have spent the past two decades searching the globe for new and exotic tastes, all the while following earthfriendly practices. This year marks the company's 20th anniversary of promoting biodiversity and promoting the use of sustainable organic agriculture.

Made with organically grown ingredients and spice combinations from India and beyond, the company's simmer sauces are easy to combine with tofu, fish, vegetables or meat. Just sauté one pound of vegetables or a favorite protein until done, add sauce, cover, and simmer for 10 minutes.

For an easy dinner, try Vegetable Jalfrezi. Roughly translated, Jalfrezi means "stir-fry." This simple dish features a potent, but not over-the-top, medium-hot curry sauce that infuses rich flavor into zucchini, portabella mushrooms, asparagus and baby corn spears.

Vegetable Jalfrezi

Servings: 4

Portion Size: 1 cup

Prep Time: 20 minutes

Start to Finish Time: 40 minutes

2 tablespoons vegetable oil

1/2 teaspoon cumin seeds

2 teaspoons garlic chopped

10-12 asparagus spears, peeled and cut into 2-inch pieces

10-12 baby corn spears, cut into quarters lengthwise

3 medium zucchini, washed and cut into 2-inch strips

3 large portabella mushrooms sliced

1 jar Seeds of Change Jalfrezi Sauce

1 tablespoon cilantro, finely chopped

1 package Seeds of Change Rishikesh Whole Grain Brown Basmati Rice

Heat oil in pan; add cumin seeds and garlic, then sauté As cumin seeds pop, add all vegetables and sauté for 2 to 3 minutes, searing them. Add sauce and toss with vegetables, heat mixture through. Sprinkle with chopped cilantro. Serve warm over brown basmati rice.
